The Low Down: Every element at STAY by Yannick Alléno is centered around creativity with elegance. And really you would expect nothing less from this Michelin-starred epicurean pioneer. However, in a town where celebrity chef-led ventures have a tendency to fall short, you need worry not as STAY by Yannick Alléno will surpass every expectation you have of fine dining. From the moment you enter the One&Only The Palm every element of your dining journey has been thought through, every detail considered, and every need catered for by staff who are trained to the highest of standards.

As winter comes into its own, and for an upscale yet subtly relaxed feel, request a seat on the outdoor terrace. To be in the thick of it however, we love the interior drama with its vaulted ceilings, black chandeliers, and velvet banquettes.

Each dish presented is a work of art. From flavor to presentation to service, it is simply exquisite. However, I have to pay homage to the Milk-fed Lamb Smoked with Zatar. It is very difficult to find a dish that takes you aback, something that entirely surprises and surpasses every interpretation you thought you knew of a dish. Yet that is exactly what this dish does. The lamb is cooked within a pastry casing and smoked over zaatar, creating the most unique flavor that will stay with you.

STAY by Yannick Alléno also offers a variety of set menus, which take diners on a journey through Alléno’s unique and creative concept of French fine dining. We experienced the STAY Emotion menu, which is a four-course discovery priced at 450AED, (04) 440 1030.
