The Low Down: Although there have been many recent additions to the ever-expanding culinary scene in Dubai over the last few months, Chingón—slang for “wicked” or “cool”—deserves special recognition for being one of the few trendy eateries in the city redefining an outdated perception of Mexican fare.

Boasting a creative menu of eclectic flavors inspired by traditional Mexican as well as Central and South American dishes, Chingón is a gastronomical hub atop the roof of the Grand Millennium Hotel offering modern twists on all-time favorites. From an extensive raw bar selection and seafood-based bites to tamales and tacos, the family-style dining experience offers foodies a chance to savor many of the restaurant’s signature plates, including the extravagant taco “El Dorado”, a black corn tortilla embedded with 24k Gold Leaf and filled with A9 Wagyu and fresh truffle. Embodying authentic Mexican zest, many of the ingredients, such as the irreplaceable Hass avocado and infamous habanero peppers, are sourced from one of Mexico’s largest family farms for a farm-to-table experience from thousands of kilometers away.

Complementing your taste buds’ journey to Mexico is Chignón’s regional-influenced ambiance, featuring illuminated Aztec lines, winding foliage mimicking Mayan jungles, and a wall lined with golden skulls—not to mention DJs playing energetic tunes incorporating South American beats and instruments. While the panoramic vistas of the Dubai Canal and Downtown Dubai from the floor-to-ceiling windows are hard to miss, don’t forget to look up at the retracting ceiling for an uninterrupted view of the stars.
